PARK 600 Exclusive Reserve Barrels

The Story

It all began in 2017 with the offer to select our very own private reserve barrel from Knob Creek. We named it Roy's Private Blend after our founder Roy Rewold.

From there, we decided to branch out and selected an Anejo Tequila from Patron which came from Temple House Quattro on the third story of the pyramid stack of barrels in their warehouse in Jalisco Mexico.

We rounded off 2017 with a custom Maker's Mark barrel that had been aged for 7 years and was infused with two staves of french cuvee and eight staves of roasted french mocha.  We named it the Paint Creek Blend.

Fast forward to the year 2018.  In February, our Executive Committee traveled to Kentucky to the Maker's Mark Distillery.  After countless hours of taste testing, the team decided upon a custom blend that included four staves of baked American pure 2, two staves of Maker's 46 and three staves of toasted French spice.  We decided to name this barrel Royal Park Reserve.

In March of 2018, our Executive Chef along with our Director of Food and Beverage traveled to Jalisco Mexico to the Patron Distillery.  Our barrel was selected from Temple House Tres from the bottom row of the pyramid stack of barrels.  It was aged for 3 months and is considered a Reposado or resting Tequila.  It emits notes of honeysuckle, grapefruit, and wheat.  This barrel was named PARK 600 Chef's Collaboration series and is used in Executive Chef Colin Brown's signature Dancing Bees Cocktail.

Our most recent edition in August of 2018 is our 2nd in the series of Roy's Blend from Knob Creek.  Knob Creek Rye is aged for approximately 9 years and The Barrel was stored in rick house 23, located on the third story facing east.This allowed morning dampness and a mild elevation in temperature throughout the day.  This barrel, named Roy's Blend 2018 has sweet tones of vanilla & caramel along with spice tones of pepper & cloves.

Our journey continues and we cannot wait to see what 2019 will have in store for our barrels.  Stay tuned for exciting new updates!
